Today I made a batch of the avocado salsa minus onion. They didn't have green onions that looked fresh to me. But the Avocados are perfectly ripe and so creamy in flavor!
No chips to dip, and I wanted to eat some. So I made some chicken & spring greens sandwiches in hotdog buns and heaped on top with the salsa.
Yes, this and my 9.5 water is a terrific meal for something impromptu!
The avocado salsa is easy to make, just a lot of chopping. First I washed all produce in the 11.5 water. I do this the day I buy to make sure it's clean and it lasts longer after the pesticides are removed.
Avocado Salsa
2 Haas Avocados
2 limes juiced
3 Roma Tomatoes
1/2 Large red Bell Pepper
1/2 Large Green Bell Pepper
1/4 cup chopped Cilantro
(I add spices to my taste so it's a pinch and dash, not measured)
Turmeric
Garlic
Black Pepper
Ginger
Smoked Paprika
Cover with plastic wrap to keep as much air out as possible.
This is also fabulous over fish or stuffed in a burger!
Doesn't this look delicious? Uno kept begging. It's sad I couldn't share, but avocado is bad for dogs. So I had to resist the urge to give in to that totally sad face!
I have to say, I wish I had large tortilla wraps instead of the buns, but otherwise this was a wonderful meal.
Vegetables taste brighter and fuller of flavor after being washed with the 11.5 water. And knowing they are free of pesticides makes me feel much better about my meals.
