Last nights dinner, yellow & wild rice with 2 cups diced tomatoes, green peppers, peas, artichoke hearts, sheep's milk feta, olive oil, smoked paprika & oregano made with 9.5 water. Really delicious ! Of course I had left overs. I planned it that way! Today, I tried something different.
I kept seeing those recipes where you make a stewed tomato and rice dish and add eggs to poach in the dish. Of course most of the recipes were pretty spicy, so I haven't tried it. Well this dish was so flavorful I knew it would be perfect to give it a try.I put a little olive oil in the saucepan and heated it, then added a serving of the rice dish from last night. I added a 1/4 cup of the 9.5 water to keep it moist. When hot I added the two eggs and covered to poach them. It took 12 minutes.
This is my brunch! Doesn't it look fabulous? And yes, Uno ate the yolks! Happy puppy! He does love the egg yolks!
I love cooking, and now I enjoy it even more. The water makes even cooking more fun! My health is better, my food tastes better and everyday I enjoy getting up and being alive!
