No chips to dip, and I wanted to eat some. So I made some chicken & spring greens sandwiches in hotdog buns and heaped on top with the salsa.
I have to say, I love, love, love Trader Joe's! They have this awesome Goat Cheese & Tomato Ravioli. It is so heavenly. Add to that their seasonal pumpkin salsa and fresh Asparagus, Grape Tomatoes and the creamy goat cheese. Seasoned with Turmeric, Ginger and Black Pepper. The flavor was amazing.
This meal was fabulous! I washed these veggies in the 11.5 water and rinsed in 9.5. I also used some of the 9.5 in the sauce. This water makes food even better. The flavor is more pure. I sometimes wonder how I ate or created delicious dishes before this water came into my life.
Lunch! Avocado, kale, spring greens, Bok Choy, goat Gouda, grape tomatoes, all veggies washed in 11.5 water to remove pesticides and makes them last longer. The greens I hit with 2.5 for 30 seconds to make sure they are free from listeria and e-coli . Then rinsed in 9.5 to keep them alkaline. I home make my dressing with olive oil, balsamic vinegar and spices. I added Turmeric & fresh ginger. Yummy!
I'm also excited that I got my new water bottle today! It's so cool looking and will definitely help start conversations about the water!
I loved my brunch so much I decided to have it again. Yeah, I don't do that often. But I added to the veggies in it by cleaning and peeling 2 carrots and 1/3 of a head of purple cabbage. I topped with a bit of manchego cheese too. I used the water for cleaning the carrots and cabbage. And added a bit again to the pan to retain moisture.
For those wondering. I have had years of severe health problems. I was so allergic to most medicines that I had given up hope of ever feeling better. Migraines, Asthma, Chronic Fatigue, Arthritis, Fibromyalgia, I was a walking encyclopedia of pain. I knew I had to keep trying, Disability alone was never going to get me anywhere. So I went to Marketing meetings.
At a meeting I met my friend Jessie. She took one look at me limping in pain and my service dog who was scratching & chewing himself so bad he had bald spots. The very next day she brought us Water and changed our lives. Almost all of my issues are gone. The limp is getting better, but it will take time as it was a recent injury to my hamstring and hip. But I have lost weight and feel so good it's amazing.
Last nights dinner, yellow & wild rice with 2 cups diced tomatoes, green peppers, peas, artichoke hearts, sheep's milk feta, olive oil, smoked paprika & oregano made with 9.5 water. Really delicious ! Of course I had left overs. I planned it that way! Today, I tried something different.
I kept seeing those recipes where you make a stewed tomato and rice dish and add eggs to poach in the dish. Of course most of the recipes were pretty spicy, so I haven't tried it. Well this dish was so flavorful I knew it would be perfect to give it a try.
This is my brunch! Doesn't it look fabulous? And yes, Uno ate the yolks! Happy puppy! He does love the egg yolks!
